Best Vanilla Cake and Buttercream

Hi! Today we are going to be making a vanilla cake. I made this for my birthday and it was super good, so I thought I would share the recipe with you guys. Here are the ingredients you’re going to need for the cake: 

  • 2 cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ¼ tsp salt 
  • 4 large eggs
  • 1 ½ cups granulated sugar
  • ½ cup room temperature butter
  • 1 cup milk
  • 3 tsp vanilla extract
  • 3 tsp vegetable oil

 Now what you’re going to do is preheat the oven to 350 degrees Fahrenheit, and grease your pan. Then whisk together flour, baking powder, and salt in a large bowl, and set it aside. Then beat the eggs for 30 seconds and add the sugar in and beat that together until it has tripled in volume and is white. While the eggs and sugar are beating, take your butter and milk and microwave it for 2 minutes or stop when it starts to bubble.

When the egg is whipped, scatter 1/3 of the flour across the surface, then beat on speed 1 for 5 seconds. Add half the remaining flour, then mix on speed 1 for 5 sec. Add remaining flour, then mix on speed 1 for 5 – 10 sec until the flour is just mixed in. Once you can’t see flour, stop. Pour hot milk, vanilla, and oil into the now empty flour bowl. Add about 1 1/2 cups of the Egg Batter into the Milk-Butter. Use a whisk to mix until smooth. Will look foamy. Turn the beater back on to speed 1 then pour the milk mixture into the Egg Batter over 15 seconds, then turn the beater off. Then scrape down the sides and base of the bowl. Beat on Speed 1 for 10 seconds – batter should now be smooth and pourable. Now Pour batter into the pans. Knock out bubbles: Bang each cake pan on the counter 3 times to knock out big bubbles, bake for 30 minutes or until golden and toothpick inserted in the center comes out clean.  


Now for the buttercream, we are going to need:

  • ½ cup softened butter
  • 1 ½ teaspoons vanilla extract
  • 2 cups of powdered sugar (sifted)
  • 2 tablespoons milk(I did not actually need this much so just add a small amount at a time)
  • Food coloring if desired


Cream the butter until smooth and fluffy. Gradually beat in confectioners’ sugar until fully incorporated. Beat in vanilla extract. Then pour in the milk and beat for an additional 3 to 4 minutes. Add food coloring, if using, and beat for thirty seconds until smooth or until the desired color is reached. Frost it and enjoy!


I am usually not a big fan of vanilla. I personally prefer chocolate most of the time but this was such a good cake! I made one for my family and one for my friends and all of them loved it. I highly suggest making this cake. I made mine green and it turned out so pretty. I really hope you enjoy this!
