The other day I had a massive baking fail and my lemon cake did not cook in the middle. So once it cooled I scooped all of the raw batter out of the cake and threw it down the garbage disposal. I was serving this cake as dessert to my grandparents that night so I had to make do with the cake bowl. I decided I wanted to fill it with meringue. So I did. I used a meringue recipe from the internet. Once it was fully cooked I let it sit for a long time. As fast as lighting dessert time came and it was time to cut the cake. The meringue fell apart when I cut into the cake and the inside looked really weird. Another downside to meringue is you can’t put anything on top of it or it will just destroy it, it is highly-sensitive. It tasted pretty good though. I think the big problem is that the meringue did not cure in the middle so it was weird. Overall I would consider it a good topping for anything you want to bake it onto but I would not recommend using it as filling.
