Chocolate Covered Banana Meringue Cookies

Today I will be making banana meringue cookies.This recipe is a great sweet treat and great for people who love banana flavored things. This is also a great treat for people who  like very sweet tasting treats. The ingredients I used for this recipe are 2 cups of chocolate chips,  2 eggs (you only need the egg whites), ⅛ tsp cream of tartar, ½ cup sugar (white), ⅛ tsp salt, ¼ tsp banana extract, and a couple drops of yellow food coloring. I also used an oven and a mixer for this recipe. The first thing I did was preheat my oven to 225 degrees fahrenheit. In my mixer, I beat together the egg whites, salt, and cream of tartar at medium-high speed until soft peaks formed. Then, I added the sugar and kept mixing until stiff peaks formed. After that, I added my banana extract and about 5 drops of yellow food coloring to my bowl and then folded it into my mixture with a spoon until everything was completely mixed. I then lined two baking sheets with aluminum foil. After, I spooned my mixture into a piping bag and then cut most of the tip off and then made little dollops on the baking sheets (Mine  were about the size of a golf ball but it doesn’t really matter what size the cookies are). I let them bake in the oven for about an hour and a half (I just baked them until they turned hard and released from the foil), and then I turned the oven off and just let the cookies sit in the oven until the oven had cooled. Lastly, I put the chocolate chips in a bowl and put them in the microwave for ten second intervals (mixing them up in between) until they were completely melted. Once they were melted, I dipped my meringue cookies in the melted chocolate. Once all of them were dipped in chocolate, I let them sit in the fridge for about an hour, so that the chocolate could harden. Then I was done! They were really good! I think the banana and chocolate flavor went really well together. The texture of the meringues were hard but light, and it made a really good snack/dessert. Although, it was a little bit too sweet for my taste. This recipe didn’t really make a mess, and it was pretty simple to make. But, I will say that the process does take a pretty long time because you have to leave them in the oven and fridge for a while. I would rate this recipe a 6 out of 10, and I would recommend this recipe if you like sweet tasting things.
