Cinnamon Chip Scones

Zora Hesselberth, Writer

A very common Scotland pastry is a scone. If you like cinnamon and scones then this is the recipe for you. This recipe I learned from my grandma and they taste soooo good so I decided I would share this recipe! I hope you enjoy this and if you want you could make a very thin icing with it!

Makes: 8 scones

Prep time: 10 min

Cook time: 25 min

  • 2 cups flour
  • ¼ cup plus 2 tablespoon sugar
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp cinnamon
  • 1 stick butter sliced and cold
  • ½ cup heavy cream
  • 1 egg
  • 1 cup cinnamon chips
  • 1 tsp vanilla extract

  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper and set it aside.
  2. In a large bowl mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. Drop-in your cold butter, and using a pastry cutter, mix until you have a wet sandy texture. The colder the butter the better so if you want, stash the mixture in the freezer for a few minutes.
  4. In a small bowl mix together the cream, egg, and vanilla
  5. Pour into the flour mixture, being sure not to over-mix. Work in with your hands as if it is biscuit dough.
  6. Once mixed add in cinnamon chips and fold in with your hands
  7. Make into a disk on your parchment paper about 8” across
  8. Cut into 8 pieces
  9. Pull apart enough to keep them from baking into each other
  10.  Bake for 20 to 25 min., until golden brown
  11.  Enjoy!
