Cinnamon Chip Scones

A very common Scotland pastry is a scone. If you like cinnamon and scones then this is the recipe for you. This recipe I learned from my grandma and they taste soooo good so I decided I would share this recipe! I hope you enjoy this and if you want you could make a very thin icing with it!
Makes: 8 scones
Prep time: 10 min
Cook time: 25 min
Ingredients
- 2 cups flour
- ¼ cup plus 2 tablespoon sugar
- 2 ½ tsp baking powder
- ½ tsp salt
- ¼ tsp cinnamon
- 1 stick butter sliced and cold
- ½ cup heavy cream
- 1 egg
- 1 cup cinnamon chips
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper and set it aside.
- In a large bowl mix together the flour, sugar, baking powder, salt, and cinnamon.
- Drop-in your cold butter, and using a pastry cutter, mix until you have a wet sandy texture. The colder the butter the better so if you want, stash the mixture in the freezer for a few minutes.
- In a small bowl mix together the cream, egg, and vanilla
- Pour into the flour mixture, being sure not to over-mix. Work in with your hands as if it is biscuit dough.
- Once mixed add in cinnamon chips and fold in with your hands
- Make into a disk on your parchment paper about 8” across
- Cut into 8 pieces
- Pull apart enough to keep them from baking into each other
- Bake for 20 to 25 min., until golden brown
- Enjoy!
