Peppermint Cake

The holidays are coming up and we don’t all celebrate the same holidays. But it is the time of year where you might want a nice and comforting flavor. I think that peppermint is a great flavor for that. The cake is also a nice thing that is quicker than some other desserts to make. So why not peppermint cake?
Ingredients:
Cake:
- box of white cake mix
- 1/3 cup butter, melted
- 1 cup milk
- 3 egg whites
- 1/4 cup water
- 1 TBSP peppermint extract
- 1 1/2-2 cups crushed peppermint candies
Frosting:
- 1/2 cup ( 1 stick ) butter, softened
- 3 1/2 cups powdered sugar
- 1 tsp peppermint extract
- 2-3 TBSP milk
Instructions
- Preheat oven to 350 degrees. Grease and flour 2-9 inch round cake pans.
- In a mixing bowl, add in the dry white cake mix. Then, add in melted butter, egg whites, milk, water, and peppermint extract. Mix until well combined.
- Pour evenly into the prepared pan.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let cakes cool for 10 minutes before removing from pans.
- Then, cool completely before frosting.
Frosting:
- Beat butter until fluffy. Gradually, add in powdered sugar. Then, add in milk and peppermint.
- Adding/subtracting milk to achieve desired consistency.
- Frost bottom layer on the cake. Then, sprinkle with 1/2 of crushed peppermint pieces.
- Top with the remaining layer of cake and frosting.
- Sprinkle the top of the cake with the remaining peppermint candies.
This would be a fun and easy cake to make with family and/or friends for the holidays and a good thing to enjoy in your time off. There are many more desserts that would be great for the holidays just as much as this one.
