Today I will be making pumpkin pancakes. I decided to make these because I love pancakes, and fall is coming around, so I decided to make them pumpkin flavored. The ingredients I used for this recipe are flour, baking powder, cinnamon, nutmeg, salt, milk, pumpkin pie mix or pumpkin puree (I used pumpkin pie mix), an egg, maple syrup, vanilla extract, and butter. This recipe also requires a pan and a stove. So I got everything I needed and started working! In a big mixing bowl, I added the flour (1 cup), baking powder (1 tbsp), cinnamon (½ tsp), nutmeg (¼ tsp), salt (¼ tsp), and mixed it together. In a separate bowl, I combined the milk (one cup), pumpkin pie mix (⅓ cup), egg (1), maple syrup (2 tablespoons), vanilla extract (½ tsp), melted butter (2 Tbsp), and whisked that until it looked well blended. Then, I combined the dry ingredients and wet ingredients, and mixed it together until the mixture was smooth without any lumps. After that, I turned the stove on medium-low heat with the pan over it. Then, I greased the pan with a little bit of oil. I could test if the pan was ready to cook the batter by pouring a couple drops of water on the pan. If the water sizzles, then the pancakes are ready to cook. Once the pan was hot enough, I poured the batter on it (I didn’t really measure, I just poured until I thought it was the right amount). I was able to make five pancakes in total. I let the pancakes cook for about 5 minutes. I flipped the pancakes once the sides looked cooked. Once the pancakes were done cooking, I stacked them and put some maple syrup on top of them. They were so delicious! They made me feel extra comfortable for some reason, and they definitely got me in the fall spirit! You can taste the pumpkin and they have the right amount of flavor. I enjoyed the texture because they were also fluffy but thin. I would rate this recipe a 9 out of 10 and I would definitely recommend trying this recipe.
