Raspberry Chocolate Truffles

Today I will be making raspberry chocolate truffles. They are made out of sweetened condensed milk, sugar, cacao powder, raspberry extract, and butter and they are dipped in sprinkles. My Au Pair and I made chocolate truffles many years ago with a recipe that we made ourselves, but that seemed a little bit boring, and so I decided to add raspberry flavoring and dip them in sprinkles for a twist. I got all the ingredients and I was ready to bake. The first thing I did was put my pot on the stove at low to medium heat, then I put the butter and sweetened condensed milk in the pan. I used one can of sweetened condensed milk and about two tablespoons of butter. Once the butter and sweetened condensed milk was done melting, then I added about ⅓ of a cup of cocoa powder, a pinch of sugar, and two teaspoons of raspberry extract. Then I stirred it all together until it all started sticking into one glop and pulled away from the edges of the pot (which took about 15 minutes of stirring). When I was stirring, I had to be consistent and use a folding motion. I tested if it is done by running a spoon through the center of the pot, and if it takes a couple of seconds for the mixture to combine again, then it is ready. If it immediately combines back together, then I just usually mix it a little more. Then, after the mixture was done being stirred, I buttered a plate, poured the mixture on the plate, and then refrigerated it for two hours. Once it was done sitting in the fridge, I took them out and got ready to roll them into balls. I buttered my hands before rolling them so that the mixture wouldn’t stick to my hands. When I started rolling, I didn’t really measure but I tried to roll the mixture into golf ball-sized balls. After I was done, I dipped the truffles into some rainbow sprinkles (it doesn’t really match the flavor, but those were they only sprinkles I had). Then the truffles were completed! I tried them and they tasted so good! I would rate them a ten out of ten for the taste! It has a really chewy texture, and they are pretty sweet. The sprinkles give them a nice little crunch and I honestly love everything about the taste and texture. I really like the cocoa and raspberry flavor combination. I would give the texture an 8 out of 10, and I would give the taste 9 out of 10. Then, I would probably rate the process a 6 out of ten because It doesn’t take too long to make these desserts. Although it does take a bit of patience to stir everything together, and you also have to be consistent with the mixing, or else it will just stick to the pan. It takes some time for them to cool in the fridge and to stir. But, the ingredients are pretty simple and accessible. This recipe is quite a bit sticky and messy also. But, in the end, it’s totally worth it! I would definitely recommend trying this recipe.
