Home Made Pumpkin Bread

I decided to experiment with homemade pumpkin bread in the spirit of fall on September 2nd. I personally love pumpkin bread and have made it many times before using box mixes, however, I love this homemade one much more after making it! The recipe I came up with at first was,


2 ¼ cup of flower

½ teaspoon of salt

½  teaspoon baking soda

1 teaspoon of cinnamon

1 cup of sugar

1 cup butter

2 eggs

1 can pumpkin


After making this recipe and tasting the bread, I felt the bread was far too dry and wasn’t fluffy enough. I tried again and this time instead I used 2 cups of flour and 1 teaspoon of baking soda and ½ teaspoon of baking powder. I whisked all the dry ingredients together then creamed the butter, canned pumpkin, and sugar until creamy then added in the eggs one at a time, then slowly added in the dry ingredients and put them all in a 9 by 4 greased pan and set in the oven at 350 degrees for 60 minutes.
