Making cookies for the holidays is a great way to spend your time with your family and friends at home.

There are many great cookies to make, but the best cookie that is easy and fun to make is the Cranberry Oatmeal cookie. It is filled with raisins, sugar, cranberries, and oats, and together create a mouthful of flavor. This recipe does not take a lot of time to prepare, and overall can be very helpful when in a rush to create a Christmas dessert for your holiday party.

When I first tried this cookie, I felt addicted and could not stop eating another (or three). Personally, this is my favorite kind of cookie, and it is the easiest cookie to make. The cookie is mixed with the sugar and raisin flavor, as well as the texture of the oats. I hope you give it a try!

Ingredients:

1 cup of softened butter

1-½ cups of sugar

2 large eggs

1 teaspoon of vanilla extract

2 cups all-purpose flour

1 teaspoon of baking powder

½ teaspoon of salt

¼ teaspoon baking soda

2 cups-quick cooking oats

1 cup of raisins

1 cup coarsely chopped fresh or frozen cranberries

1 tablespoon grated orange zest

1 package (10-12 ounces) of white baking chips

Directions:

  1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, salt, and baking soda; add to the creamed mixture. Stir in the oats, raisins, cranberries, and orange zest. Stir in baking chips.
  2. Drop by rounded teaspoons 2 inches apart on greased baking sheets. Bake at 375 degrees until edges are lightly brown, 10-12 minutes. Let them cool on wire racks.

Tips:

Keep an eye out for your first couple of batches to adjust temperatures or times if needed when baking.

It is more easy to use a cookie scooper to transfer the batch to the trays.

It is important you make your batch the same size as the cookie so they all cook evenly.

Other than the sugar, this cookie can be healthy compared to many other cookies. This is a great Christmas cookie and is enjoyable for all ages. I would definitely make these cookies again, but would you?
